In Minecraft, saddles are items that allow a player to ride pigs, horses, mules, and donkeys after they have been saddled. As of 1.4.2, the pig can be controlled by a carrot on a stick. Before version 1.4.2, a saddle could not be removed from a pig, and it would be permanently lost if the pig despawned or died.

Find a Chest in the Nether Fortress
If you haven’t been to the Nether you need to build a nether portal to take you to the Nether. Once you’ve found a Nether fortress, look inside the fortress for a chest. If you are lucky, you will find a saddle.
Catch a Saddle when Fishing
You can also add a saddle to your inventory by fishing. If you are very lucky, you may catch in a saddle when you reel in your fishing line. When you see the saddle come out of the water, it will automatically be added to your inventory.
