In Minecraft, saddles are items that allow a player to ride pigs, horses, mules, and donkeys after they have been saddled. As of 1.4.2, the pig can be controlled by a carrot on a stick. Before version 1.4.2, a saddle could not be removed from a pig, and it would be permanently lost if the pig despawned or died.
A saddle is an item that you can not make with a crafting table or furnace, like smithing table. Instead, you need to find and gather this item in the game. Here is how you can find a saddle in Minecraft.
